Coconut Curry Soup

This is going to be the most Well rounded meal in your recipe box. My Coconut Curry Soup provides the best blend of anti-inflammatory spices andfats, and it will helps to fuel your metabolism throughout your Rhythm Cleanse.

Ingredients

1 Red Pepper
1/2 Green Pepper
1/2 Red Onion
Handful of thinly sliced Carrots
1/2 Sliced Zucchini (optional)
1 Garlic Clove 6-8 oz of Mushrooms (Shitake is best for your immune system)
1 Jar of Red Curry Paste (like the Thai Kitchen brand)
1 Cup Chicken Broth
1/4 Cup of Coconut Aminos
1 Can of Coconut Milk (not the light version)
1 Tbsp. Coconut Oil
1 Tsp. Cayenne Pepper or to taste
1-1.5 Tbsp. Curry Powder
Sea Salt to taste
1/4 Avocado to garnish and a few slices of Cucumber

Preparation

Drizzle a bit of Coconut Oil on a large skillet then empty the jar of Curry paste into pan. Mix the oil and paste together and let simmer for several minutes.

Get the avocado/cucumber garnish ready.

Add one Cup Water and the Cup of chicken broth into skillet.

Add Carrots and bring to boil...only one minute as carrots get mushy.

Add all other vegetables and the can of coconut milk, stir in well.

Add spices and Ccoonut aminos.

Bring to simmer, 2-5 minutes.

Plate and garnish with avocado and cucumber.

Makes about five 1-cup servings.
