Friendly Meatloaf


This meal goes best with a side of Brussels sprouts and a White Yam(Japanese Sweet potato)
- Brussels Sprouts- Sauté in Avocado Oil until crispy roughly, 5 minutes.
- White Yam- Puncture with fork all over. Place on foil then bake at 350 for 1.5 hours.
MeatLoaf
  • 2 lbs Beef - pork - veal mixture (grass fed beef works well alone)
  • 1/2 C Onion, diced
  • 1/4 C Carrot, minced
  • 1/4 C Celery, minced
  • 2-3 Garlic Cloves, minced
  • 2 TBSP Parsley, minced
  • 1 TBSP Basil, minced
  • 1 TBSP thyme and rosemary combined (better when ground to powder)
  • 1 TBSP Sea Salt
  • 1 Tsp Ground Pepper
  • 1 Tsp Red Pepper - or any substitute like paprika or smoked paprika
  • 1/4 Ketchup'**sub Coconut amino-Apple cider Vin-stevia(dash)
  • the substitute is for the strict Rhythm Cleanse Phase I&II
  • 1/4 C Dijon Mustard or any other Mustard you like
  • 2 large pastured eggs
  • 2 TBSP butter, grass fed
  • 2 TBSP of Cassava Flour. Enough water whisked in to make a pour-able paste

PREPARATION
Preheat oven to 350,
  1. Melt Butter over medium, in medium-large skillet, add onion - 1 min, add celery and carrot - 2 more minutes, add crushed garlic, stir constantly until garlic fragrance comes out for 10-15 seconds (don’t burn and don't let veggies get too mushy as they’ll cook more in the loaf.

    -put into big mixing bowl to cool at least 3-5 minutes - don’t allow egg to cook on hot veggies.

  2. Cassava flour in small mixing bowl, add dash of water ~ 2 TBSP - and mix until clumps are gone, you can use more water if needed, extra liquid will cook off.

    -add to cooked veggies, best when warm as this makes a pasty veggie gravy.

  3. Bring in the liquids, spices and herbs to the veggies mix. Mix well.

  4. Add the Meat and mix well with hands,then stir in the eggs. Mix well again with hands.
  5. Place in a Pyrex or Loaf pan

Bake at 350 on middle rack for 1hr 10min, this should get the loaf to an internal temp of 155-160.
